Oatmeal is a very nourishing breakfast, setting the stage for stable blood sugar and energy levels all day. Oats add substance to the diet, calming the nervous system and inviting the relaxation response. Walnuts and flaxseed are full of omega-3 fatty acids, while dark berries provide antioxidants to nourish blood.
1 ½ cups rolled oats
3 cups water
¼ cup raisins
½ cup blueberries
2 teaspoons ground flaxseed
¼ cup crushed walnuts
Bring water to a boil. Add oats and simmer on medium heat. Once the water evaporates, add raisins and berries (allow frozen berries to defrost). Place in bowl and top with flaxseed and walnuts, and applesauce, if desired. Serves 2.

Combine ½ cup of oats or quinoa with 1½ cups boiling water in a wide-mouthed thermos and seal tightly, leaving overnight. Add toppings, such as berries, walnuts, flaxseed, in the morning and you are on your way!
