Carrot Ginger Soup
This is a household favorite and so easy to make. Carrots are a great source of beta-carotene and help to support hormones. They also promote beautiful skin, help to resolve acne and assist in the metabolism of calcium.
1 pound carrots, chopped
1 small onion, chopped
2 Tablespoons olive oil
32 ounces organic chicken stock
Optional: pink Himalayan sea salt or curry powder to taste.
Saute a 1 pound bag of carrots and 1 small onion in olive oil. Add 2 tablespoons of fresh ginger. Once carrots are soft add 32 ounces of chicken stock or vegetable stock and bring to a boil. Let simmer for at least 30 minutes. Add to vitamin, puree and season with pink sea salt or curry powder.
