Mexican Dip with Black Beans, Salsa and Avocado

My cousin Julie made this dip for a family summer BBQ and I have been dreaming of making it ever since.  Super bowl Sunday was the perfect occasion and our guests loved it.  It was so easy to make and I served the dip with organic corn chips.  Choosing organic ensures that you are avoiding any of the harmful effects of toxins and therefore hormone disruptors.  Here are the ingredients:

Mix together mango pineapple salsa (trader joe’s) with

1 can of organic black beans

1 can organic corn

1 small chopped red onion

4 celery stalks

1/2 or a whole chopped red pepper

Top with chopped cilantro and avocado (at the last minute).  Squeeze fresh lemon on top.  Enjoy!
