Gluten Free Waffles sweetened with Coconut Sugar

I love these waffles both for how easy they are too make and how light and fluffy they are.  Many of you, who cook and bake gluten free know that light and fluffy are not always synonymous with gluten free.  I have been testing out a low glycemic coconut sugar made by a local company called Big Tree Farms.  Low glycemic is especially important for fertility as it helps to make sure your body is properly utilizing insulin and not pumping the stress hormone cortisol through your body.

Here are the ingredients:

2 farm free eggs

1/2 cup of coconut yogurt or full fat greek yogurt

1/2 cup coconut milk or full fat organic milk

1 cup gluten free flour (I’ve been loving Namaste’s Perfect Flour Blend)

1 tablespoon Big Tree Organic Coconut Sugar: Blonde

1 teaspoon baking powder

1 teaspoon baking soda

2 tablespoons of organic grass fed butter

Mix all ingredients and add to waffle pan. Makes 5-6 small waffles. Top with fresh strawberries and your choice of maple syrup or try Big Tree Coconut Nectar. Extra delicious with a cup of organic fertility tea!
